History / Background Information:

Baja Fresh is a relatively new chain of Tex-Mex restaurants that boasts fresh ingredients in all its dishes. Founded in 1990 by Jim and Linda Magglos, the first restaurant was in Newbury Park, Calif. Its headquarters are in Thousand Oaks, Calif.

Currently there are 300 restaurants in 17 states, with franchising opportunities available in the United States and internationally. Baja Fresh restaurants offer catering services as well as online ordering. There are several locations in California, some in Mexico, a few in Canada, and some in Florida.

A special feature of the restaurants is a self-serve salsa bar. Baja Fresh also takes pride in their fresh ingredients, selecting fresh vegetables and spices for salsas and ripe avocados for guacamole. Additionally, their traditional fire-grilled Mexican meals are made from fresh ingredients.

Baja Fresh became a subsidiary of Wendy’s in 2002, but it was sold in 2006 to David Kim, a private investor consortium, for $31 million.
